White pepper is picked when it is fully ripe, soaked in water for about ten days, which leads to fermentation. The skin is then removed which exposes the white part of the pepper.

Whereas the white peppercorns with the skin removed become subtle and less spicy. White pepper is commonly used in Asian cooking especially in stir-fries or soups.
